Ingredients:
- 1 lb sweet potato, peeled and diced into ½ inch cubes
- 2 tbsp breast milk, formula, or water
Instructions:
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Peel the sweet potato and dice it into small, uniform ½ inch cubes.
- Spread the cubes in a single layer on the pan and roast for 20–25 minutes, tossing once halfway through, until edges are slightly browned and centers are tender.
- Transfer the hot sweet potato cubes into a blender or bowl.
- Add chosen liquid (breast milk, formula, or water) one tablespoon at a time and blend on high until the mixture is completely smooth and glossy.
