Ingredients:

  • 1 lb sweet potato, peeled and diced into ½ inch cubes
  • 2 tbsp breast milk, formula, or water

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Peel the sweet potato and dice it into small, uniform ½ inch cubes.
  3. Spread the cubes in a single layer on the pan and roast for 20–25 minutes, tossing once halfway through, until edges are slightly browned and centers are tender.
  4. Transfer the hot sweet potato cubes into a blender or bowl.
  5. Add chosen liquid (breast milk, formula, or water) one tablespoon at a time and blend on high until the mixture is completely smooth and glossy.
