Ingredients:
- 1 lb (450g) zucchini, coarsely grated
- 1/2 cup (60g) feta cheese, crumbled
- 4 green onions, finely chopped
- 3 tbsp (9g) fresh mint, finely chopped
- 2 tbsp (6g) fresh dill, finely chopped
- 1 large egg, beaten
- 1/2 cup (65g) all-purpose flour
- 4 tbsp (25g) Panko bread crumbs
- 1/2 tsp (3g) salt
- 1/2 cup (120ml) extra virgin olive oil
Instructions:
- Grate the zucchini into a bowl and toss with a pinch of salt. Note: This starts the water extraction process
- Let the zucchini sit for 5 minutes.
- Transfer the shreds to a kitchen towel. Twist and squeeze firmly until no more liquid escapes.
- In a large bowl, combine the squeezed zucchini, crumbled feta, green onions, mint, and dill. Note: The smell of raw mint and salty feta is incredible here
- Fold in the beaten egg, flour, and Panko crumbs.
- Mix until the batter is cohesive and just barely holds its shape.
- Heat oil in the skillet over medium high heat until it shimmers.
- Scoop about 2 tablespoons of batter per fritter, flattening them slightly with the back of the spoon.
- Fry for 3–4 minutes per side until a mahogany colored crust forms and the edges are crisp.
- Transfer to a wire rack or paper towels to drain.
