Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) coconut sugar
- 1 large egg
- 1 tsp (5ml) pure vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1/4 cup (25g) superfine almond flour
- 1/2 tsp (3g) baking soda
- 1/4 tsp (1.5g) sea salt
- 1 cup (170g) dark chocolate chips (70% cocoa or higher)
- flaky sea salt for topping
Instructions:
- Preheat oven to 350°F (175°C) and line a 12x17 inch half-sheet pan with parchment paper, leaving a slight overhang.
- In a large bowl, whisk together the softened butter and coconut sugar until creamy. Beat in the egg and vanilla extract until the mixture is cohesive and glossy.
- Sift the all-purpose flour, almond flour, baking soda, and salt directly into the wet ingredients.
- Using a silicone spatula, gently fold the mixture until no streaks of flour remain, then fold in the dark chocolate chips.
- Transfer the dough to the prepared pan and press into an even layer reaching all four corners.
- Bake for 15-18 minutes until edges are deep golden brown and the center is slightly soft. Remove from oven and immediately sprinkle with flaky sea salt.
