Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) packed brown sugar
- 1 large egg (50g)
- 1 tsp (5ml) vanilla extract
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 1/4 cup (50g) granulated sugar
- 1 tbsp (8g) ground cinnamon
Instructions:
- Beat the softened butter and brown sugar on medium-high for 2-3 minutes until the mixture is pale and fluffy.
- Beat in the egg and vanilla extract until the mixture is smooth.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
- Set the mixer to the lowest setting and add the flour mixture, mixing only until the flour is just incorporated and the dough is soft and slightly tacky.
- Scoop 1.5 tablespoon portions of dough and roll them into 1-inch balls.
- Combine the granulated sugar and ground cinnamon in a shallow bowl; roll each dough ball in the mixture until fully coated.
- Place the cookies 2 inches apart on a parchment-lined baking sheet.
- Bake at 350°F (175°C) for 10-12 minutes. Remove when the edges are set but the centers still look slightly underbaked and soft.
