Ingredients:

  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) packed brown sugar
  • 1 large egg (50g)
  • 1 tsp (5ml) vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) salt
  • 1/4 cup (50g) granulated sugar
  • 1 tbsp (8g) ground cinnamon

Instructions:

  1. Beat the softened butter and brown sugar on medium-high for 2-3 minutes until the mixture is pale and fluffy.
  2. Beat in the egg and vanilla extract until the mixture is smooth.
  3. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  4. Set the mixer to the lowest setting and add the flour mixture, mixing only until the flour is just incorporated and the dough is soft and slightly tacky.
  5. Scoop 1.5 tablespoon portions of dough and roll them into 1-inch balls.
  6. Combine the granulated sugar and ground cinnamon in a shallow bowl; roll each dough ball in the mixture until fully coated.
  7. Place the cookies 2 inches apart on a parchment-lined baking sheet.
  8. Bake at 350°F (175°C) for 10-12 minutes. Remove when the edges are set but the centers still look slightly underbaked and soft.
