Ingredients:

  • 2 medium sweet potatoes (approx. 1 lb / 450g)
  • 1 tbsp olive oil
  • ½ tsp kosher salt

Instructions:

  1. Scrub the sweet potatoes clean. Pat them completely dry with paper towels. Note: Any leftover water will steam the skin instead of crisping it
  2. Pierce the skin of each potato 5-6 times with a fork. Note: This lets the internal steam escape so the potato doesn't burst
  3. Rub each potato generously with olive oil. Sprinkle with kosher salt.
  4. Place the potatoes in the air fryer basket. Ensure they are not touching.
  5. Set the air fryer to 375°F (190°C).
  6. Air fry for 20 to 25 minutes. Listen for a slight sizzle coming from the basket.
  7. Flip the potatoes over using tongs.
  8. Continue cooking for another 20 to 25 minutes until the skin looks wrinkled and browned.
  9. Check for doneness by squeezing with tongs or inserting a knife into the center. It should slide in with zero resistance.
