Ingredients:
- 1.5 cups (180g) Biscoff cookie crumbs
- 5 tbsp (70g) unsalted butter, melted
- 1/4 tsp (1.5g) sea salt
- 16 oz (450g) full-fat cream cheese, softened
- 8 oz (225g) white chocolate, finely chopped
- 1 cup (240ml) heavy cream, chilled
- 1 tsp (5ml) vanilla extract
- 2 tbsp (30g) powdered sugar
- 1/2 cup (130g) Biscoff spread
- 2 tbsp (30g) unsalted butter, melted
Instructions:
- Combine Biscoff crumbs, melted butter, and salt in a bowl. Press the mixture firmly into the bottom of a 9-inch springform pan and chill in the freezer for 10 minutes.
- Melt the chopped white chocolate in 30-second intervals in the microwave, stirring until smooth.
- Beat the softened cream cheese and powdered sugar until airy, then gradually fold in the melted chocolate and vanilla extract until uniform.
- Whisk chilled heavy cream until stiff peaks form, then gently fold the whipped cream into the chocolate-cheese mixture using a spatula.
- Pour the filling into the prepared crust and smooth the top with an offset spatula.
- Warm the Biscoff spread and melted butter for 20 seconds. Dollop tablespoons of the mixture onto the cheesecake surface and use a knife to create swirls.
- Decorate with whole Biscoff cookies and refrigerate for at least 8 hours to set.
