Ingredients:
- 2 lbs sweet potatoes, peeled and diced into 1-inch cubes
- 3 tbsp extra virgin olive oil
- 1 tsp kosher salt
- ½ tsp cracked black pepper
- 1 tsp garlic powder
- 1 cup shredded sharp cheddar cheese
- 2 tbsp fresh parsley, chopped
- 1 stalk green onion, thinly sliced
- ½ tsp smoked paprika
Instructions:
- Preheat your oven to 400°F (200°C).
- Peel and dice the sweet potatoes into uniform 1-inch cubes.
- In a mixing bowl, toss the sweet potato cubes with olive oil, salt, pepper, and garlic powder until evenly coated.
- Spread the seasoned potatoes on a parchment-lined baking sheet in a single layer.
- Roast for 20–25 minutes, flipping the potatoes halfway through, until the edges are golden-brown and centers are soft.
- Remove the pan from the oven and sprinkle the shredded cheddar cheese and smoked paprika evenly over the potatoes.
- Return to the oven for 3–5 minutes, or until the cheese is bubbling and melted.
- Garnish with fresh parsley and thinly sliced green onions immediately before serving.
