Ingredients:

  • 2 lbs sweet potatoes, peeled and diced into 1-inch cubes
  • 3 tbsp extra virgin olive oil
  • 1 tsp kosher salt
  • ½ tsp cracked black pepper
  • 1 tsp garlic powder
  • 1 cup shredded sharp cheddar cheese
  • 2 tbsp fresh parsley, chopped
  • 1 stalk green onion, thinly sliced
  • ½ tsp smoked paprika

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Peel and dice the sweet potatoes into uniform 1-inch cubes.
  3. In a mixing bowl, toss the sweet potato cubes with olive oil, salt, pepper, and garlic powder until evenly coated.
  4. Spread the seasoned potatoes on a parchment-lined baking sheet in a single layer.
  5. Roast for 20–25 minutes, flipping the potatoes halfway through, until the edges are golden-brown and centers are soft.
  6. Remove the pan from the oven and sprinkle the shredded cheddar cheese and smoked paprika evenly over the potatoes.
  7. Return to the oven for 3–5 minutes, or until the cheese is bubbling and melted.
  8. Garnish with fresh parsley and thinly sliced green onions immediately before serving.
