Ingredients:
- 2 medium sweet potatoes, halved lengthwise (approx. 1.5 lbs / 680g)
- 2 tbsp extra virgin olive oil
- 1 tsp kosher salt
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
Instructions:
- Wash the sweet potatoes thoroughly and pat them completely dry with a paper towel to ensure maximum crispness.
- Slice each sweet potato in half lengthwise, ensuring the halves are relatively equal in size.
- In a small bowl, whisk together the olive oil, kosher salt, garlic powder, and smoked paprika.
- Brush or rub the seasoning oil mixture generously over the cut sides and the skin of each potato half.
- Line a large rimmed baking sheet with parchment paper and place the potato halves cut-side down on the sheet.
- Roast at 400°F (200°C) for 30–35 minutes until the cut sides are deep mahogany-brown and the centers are soft when pressed with a fork.
