Ingredients:

  • 2 medium sweet potatoes, halved lengthwise (approx. 1.5 lbs / 680g)
  • 2 tbsp extra virgin olive oil
  • 1 tsp kosher salt
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika

Instructions:

  1. Wash the sweet potatoes thoroughly and pat them completely dry with a paper towel to ensure maximum crispness.
  2. Slice each sweet potato in half lengthwise, ensuring the halves are relatively equal in size.
  3. In a small bowl, whisk together the olive oil, kosher salt, garlic powder, and smoked paprika.
  4. Brush or rub the seasoning oil mixture generously over the cut sides and the skin of each potato half.
  5. Line a large rimmed baking sheet with parchment paper and place the potato halves cut-side down on the sheet.
  6. Roast at 400°F (200°C) for 30–35 minutes until the cut sides are deep mahogany-brown and the centers are soft when pressed with a fork.
