Ingredients:

  • 1 lb chicken sausage, pre-cooked and sliced into rounds
  • 600g sweet potatoes, peeled and cubed
  • 150g red onion, cut into wedges
  • 2 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
  2. In a large mixing bowl, toss the cubed sweet potatoes, sliced sausage, and red onion with olive oil, garlic powder, smoked paprika, sea salt, and black pepper until evenly coated.
  3. Spread the mixture in a single layer across the prepared baking sheet, ensuring the pan is not overcrowded to prevent steaming.
  4. Bake for 25–30 minutes, using a spatula to flip the ingredients halfway through for even browning.
  5. Remove from the oven once the potatoes are mahogany-colored and the sausage has charred, crisp edges.
