Ingredients:
- 1 lb chicken sausage, pre-cooked and sliced into rounds
- 600g sweet potatoes, peeled and cubed
- 150g red onion, cut into wedges
- 2 tbsp extra virgin olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Instructions:
- Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
- In a large mixing bowl, toss the cubed sweet potatoes, sliced sausage, and red onion with olive oil, garlic powder, smoked paprika, sea salt, and black pepper until evenly coated.
- Spread the mixture in a single layer across the prepared baking sheet, ensuring the pan is not overcrowded to prevent steaming.
- Bake for 25–30 minutes, using a spatula to flip the ingredients halfway through for even browning.
- Remove from the oven once the potatoes are mahogany-colored and the sausage has charred, crisp edges.
