Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 1/2 cup (100g) granulated sugar
- 1/2 cup (100g) packed brown sugar
- 1 large egg (50g)
- 1/3 cup (80g) pumpkin puree
- 1 tsp (5ml) vanilla extract
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 1 tsp (2g) ground cinnamon
- 1 tsp (2g) pumpkin pie spice
- 1 cup (170g) semi-sweet chocolate chips
Instructions:
- Beat the softened butter, granulated sugar, and brown sugar on medium-high speed until the mixture looks pale and fluffy.
- Add the egg, pumpkin puree, and vanilla extract. Mix on medium speed until fully incorporated.
- Reduce mixer speed to low. Slowly add the flour, baking soda, salt, cinnamon, and pumpkin pie spice. Mix until just combined, then fold in the chocolate chips by hand with a spatula.
- Scoop rounded tablespoons of dough onto parchment-lined sheets and gently press the top of each ball to flatten it into a thick disc.
- Bake at 350°F (175°C) for 10-12 minutes. Remove when the edges are set and the tops look dry.
