Ingredients:
- 2 cups (250g) shredded zucchini
- 1/2 tsp (3g) kosher salt
- 1/2 cup (50g) grated Parmesan cheese
- 1 large (50g) egg, beaten
- 1/4 cup (30g) all-purpose flour
- 2 cloves (6g) garlic, minced
- 2 tbsp (8g) fresh parsley, chopped
- 1/4 tsp (1g) black pepper
- 3 tbsp (45ml) olive oil
- 1 tbsp (14g) unsalted butter
Instructions:
- Toss the shredded zucchini with salt in a colander and let it sit for 10 minutes to draw out moisture.
- Transfer the zucchini to a cheesecloth or kitchen towel and squeeze firmly until no more liquid drips out.
- In a large bowl, whisk together the beaten egg and grated Parmesan cheese.
- Stir the minced garlic, chopped parsley, and black pepper into the egg and cheese mixture.
- Fold in the squeezed zucchini and all-purpose flour, stirring until just combined.
- Heat the olive oil and butter in a skillet over medium-high heat until the butter foams.
- Scoop approximately 1/4 cup of batter per fritter into the pan, flattening slightly with a spatula.
- Fry for 3-4 minutes per side until a deep mahogany-colored crust forms.
- Transfer the fritters to a wire rack to maintain crispness.
