Ingredients:
- 1 lb carrots, peeled and sliced into sticks
- 2 tbsp olive oil
- 1/2 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh parsley, chopped
Instructions:
- Preheat your oven to 425°F (218°C).
- In a large bowl, toss the sliced carrots with olive oil, minced garlic, salt, and pepper until thinly and evenly coated.
- Spread the carrots in a single layer on a parchment lined baking sheet.
- Roast for 15-20 minutes until fork tender and caramelized brown edges appear.
- Remove the pan and sprinkle the grated Parmesan cheese evenly over the carrots.
- Return to the oven for another 5-10 minutes until the cheese is melted and has turned a golden brown, shattering crust.
- Garnish with chopped fresh parsley before serving.
