Ingredients:

  • 1 lb carrots, peeled and sliced into sticks
  • 2 tbsp olive oil
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh parsley, chopped

Instructions:

  1. Preheat your oven to 425°F (218°C).
  2. In a large bowl, toss the sliced carrots with olive oil, minced garlic, salt, and pepper until thinly and evenly coated.
  3. Spread the carrots in a single layer on a parchment lined baking sheet.
  4. Roast for 15-20 minutes until fork tender and caramelized brown edges appear.
  5. Remove the pan and sprinkle the grated Parmesan cheese evenly over the carrots.
  6. Return to the oven for another 5-10 minutes until the cheese is melted and has turned a golden brown, shattering crust.
  7. Garnish with chopped fresh parsley before serving.
