Ingredients:
- 1.5 cups (190g) Biscoff cookies, finely crushed
- 4 tbsp (55g) unsalted butter, melted
- 1 pinch (1g) sea salt
- 16 oz (450g) full-fat cream cheese, softened
- 0.5 cup (120g) plain Greek yogurt, strained
- 0.5 cup (120g) powdered sugar, sifted
- 0.75 cup (190g) Biscoff spread, softened
- 1 tsp (5ml) pure vanilla extract
- 1 cup (240ml) heavy whipping cream, chilled
- 0.5 cup (120g) Biscoff spread
- 1 tbsp (15g) coconut oil
Instructions:
- Pulse Biscoff cookies in a food processor until they resemble fine sand.
- Pour in melted butter and salt; pulse until the mixture looks like wet sand.
- Firmly press the mixture into the bottom of the springform pan using the base of a glass and chill in the fridge for 15 minutes.
- In a large bowl, beat the softened cream cheese and powdered sugar until smooth and pale.
- Fold in the Greek yogurt, Biscoff spread, and vanilla extract. Mix on medium speed until the color is a uniform golden-tan.
- In a separate chilled bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the Biscoff mixture using a spatula until no white streaks remain.
- Pour the filling over the chilled crust and smooth the top with an offset spatula.
- Refrigerate the cheesecake for at least 6 hours.
- Melt Biscoff spread and coconut oil in the microwave in 20-second bursts until runny.
- Pour the melted spread over the set cheesecake and tilt the pan to coat evenly.
- Garnish with a few whole Biscoff cookies around the perimeter.
