- 1.5 cups all-purpose flour

- 1.5 cups grated zucchini
- 0.5 tsp cinnamon (for topping)
- 1 tbsp granulated sugar (for topping)
Instructions:
- Preheat your oven to 350°F (175°C) and line a standard 12-cup muffin tin with liners.
- In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking soda, cinnamon, and salt until no large clumps remain.
- Add the vegetable oil, egg, and vanilla extract to the dry ingredients and stir until just combined.
- Gently fold in the grated zucchini using a rubber spatula. Stop mixing as soon as flour streaks disappear to ensure a tender texture.
- Divide the batter evenly among the 12 muffin cups.
- Mix the extra cinnamon and sugar for the topping, then sprinkle the mixture evenly over the top of each muffin.
- Bake for 20–25 minutes. Test with a toothpick; it should come out clean or with a few moist crumbs.
