Ingredients:

  • 1.5 cups all-purpose flour
  • 0.75 cup granulated sugar
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 0.5 tsp salt
  • 0.5 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract
  • 1.5 cups grated zucchini
  • 0.5 tsp cinnamon (for topping)
  • 1 tbsp granulated sugar (for topping)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a standard 12-cup muffin tin with liners.
  2. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking soda, cinnamon, and salt until no large clumps remain.
  3. Add the vegetable oil, egg, and vanilla extract to the dry ingredients and stir until just combined.
  4. Gently fold in the grated zucchini using a rubber spatula. Stop mixing as soon as flour streaks disappear to ensure a tender texture.
  5. Divide the batter evenly among the 12 muffin cups.
  6. Mix the extra cinnamon and sugar for the topping, then sprinkle the mixture evenly over the top of each muffin.
  7. Bake for 20–25 minutes. Test with a toothpick; it should come out clean or with a few moist crumbs.
