Ingredients:
- 2 cups (250g) all-purpose flour
- 1 cup (200g) granulated sugar
- ½ cup (115g) unsalted butter, melted and cooled
- ½ cup (125g) Lotus Biscoff spread, softened
- 3 large eggs, room temperature
- ½ cup (120ml) sour cream
- 1 tsp (5ml) vanilla extract
- 1 ½ tsp (7g) baking powder
- ½ tsp (3g) salt
- 1 cup (225g) unsalted butter, softened
- 3 cups (360g) powdered sugar, sifted
- ½ cup (125g) Lotus Biscoff spread
- 2 tbsp (30ml) heavy cream
- 1 tsp (5ml) vanilla extract
- 6 (60g) Biscoff cookies, crushed
- ¼ cup (60g) Lotus Biscoff spread, melted for glazing
- 2 tbsp (30ml) heavy cream
Instructions:
- Preheat your oven to 350°F (175°C) and grease your pan.
- Whisk the melted butter and Biscoff spread together until smooth.
- Beat in the sugar and eggs one by one until the mixture looks pale and aerated.
- Stir in the sour cream and vanilla extract.
- Gently fold in the flour, baking powder, and salt using a spatula—stop as soon as no streaks of flour remain.
- Pour the batter into the prepared pan, smoothing the top with a spatula.
- Bake for 30–35 minutes until the edges pull slightly away from the pan and a toothpick inserted into the center comes out with a few moist crumbs.
- Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Cream the softened butter and Biscoff spread together until fluffy.
- Gradually add powdered sugar, heavy cream, and vanilla, beating on high for 2 minutes until the frosting is velvety.
- Slather a generous layer of frosting over the cooled cake.
- Warm the ¼ cup of Biscoff spread with 2 tbsp of cream and drizzle it over the edges.
- Press the crushed Biscoff cookies around the base or top for a shattering texture.
