Ingredients:

  • 2 medium (approx. 1 lb / 450g) zucchini, sliced into ½-inch (1.3cm) thick spears or halves
  • ½ tsp (3g) kosher salt
  • ¼ tsp (1g) cracked black pepper
  • 3 tbsp (45ml) extra virgin olive oil
  • 3 cloves (9g) garlic, finely minced
  • 1 tbsp (15ml) fresh lemon juice
  • 1 tsp (2g) lemon zest

Instructions:

  1. Wash the zucchini and pat them completely dry with a paper towel to ensure a proper char.
  2. Slice the zucchini lengthwise into quarters (spears) or halves, ensuring a consistent thickness of ½-inch (1.3cm).
  3. Place zucchini slices in a bowl and toss with salt and pepper.
  4. In a small bowl, whisk together the olive oil, minced garlic, lemon juice, and lemon zest until emulsified.
  5. Pour the marinade over the zucchini and toss gently to coat.
  6. Allow the zucchini to marinate for 10–15 minutes; do not exceed 20 minutes to avoid sogginess.
  7. Preheat your grill or grill pan to medium-high heat.
  8. Place the zucchini on the grill perpendicular to the grates.
  9. Sear for 3–5 minutes per side until a deep mahogany char forms and the center is slightly translucent.
  10. Remove from heat and serve.
