Ingredients:

  • 2 tbsp Jamaican jerk seasoning
  • 1 tbsp olive oil
  • 1 tsp brown sugar
  • 1 clove garlic, minced
  • 1/4 tsp ground allspice
  • 4 (6 oz) tilapia fillets
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 1 lime, cut into wedges
  • 1 tbsp melted unsalted butter
  • 1 tbsp fresh parsley, chopped

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with foil and lightly grease it with cooking spray.
  2. In a small bowl, whisk together the jerk seasoning, olive oil, brown sugar, minced garlic, and allspice until a thick paste forms.
  3. Pat the tilapia fillets completely dry with paper towels. Season both sides lightly with salt and pepper, then generously spread the jerk paste over the top of each fillet, pressing it in firmly.
  4. Place the fillets on the prepared sheet and bake for 10–12 minutes until the fish is opaque and the topping is mahogany-colored. Ensure internal temperature reaches 145°F (63°C).
  5. Immediately remove from oven, brush each fillet with melted butter, squeeze fresh lime juice over the top, and garnish with chopped parsley.
