Ingredients:

  • 2 lbs sweet potatoes, peeled and cubed into 1/2 inch pieces
  • 1 medium yellow onion, diced
  • 3 tbsp avocado oil
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric powder
  • 1/2 tsp smoked paprika
  • 1 tsp kosher salt
  • 1/2 tsp cracked black pepper
  • 1/4 cup fresh cilantro, chopped
  • 1 tbsp fresh lime juice

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. In a large mixing bowl, combine cubed sweet potatoes and diced onion. Add avocado oil and the spice blend (cumin, coriander, turmeric, paprika, salt, and pepper). Toss until vegetables are evenly coated.
  3. Spread the mixture in a single layer on a parchment-lined baking sheet, ensuring the pan is not overcrowded.
  4. Roast for 25–30 minutes, flipping the potatoes halfway through, until edges are mahogany-colored and tender.
  5. Remove from oven and immediately drizzle with fresh lime juice and toss with chopped cilantro.
