Ingredients:
- 2 lbs sweet potatoes, peeled and cubed into 1/2 inch pieces
- 1 medium yellow onion, diced
- 3 tbsp avocado oil
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric powder
- 1/2 tsp smoked paprika
- 1 tsp kosher salt
- 1/2 tsp cracked black pepper
- 1/4 cup fresh cilantro, chopped
- 1 tbsp fresh lime juice
Instructions:
- Preheat oven to 400°F (200°C).
- In a large mixing bowl, combine cubed sweet potatoes and diced onion. Add avocado oil and the spice blend (cumin, coriander, turmeric, paprika, salt, and pepper). Toss until vegetables are evenly coated.
- Spread the mixture in a single layer on a parchment-lined baking sheet, ensuring the pan is not overcrowded.
- Roast for 25–30 minutes, flipping the potatoes halfway through, until edges are mahogany-colored and tender.
- Remove from oven and immediately drizzle with fresh lime juice and toss with chopped cilantro.
