Ingredients:

  • 2 lbs sweet potatoes, scrubbed clean
  • 1 tsp kosher salt

Instructions:

  1. Scrub the sweet potatoes under cold running water to remove all soil.
  2. Cut the potatoes into uniform 1-inch cubes, halves, or leave them whole depending on your preference.
  3. Place the potatoes in a pot and cover them with cold water by at least 1 inch.
  4. Stir in the salt.
  5. Bring the water to a boil over high heat, then immediately reduce the heat to a medium-low simmer.
  6. Simmer until fork-tender: 15–20 minutes for 1-inch cubes, 20–25 minutes for halved/quartered, or 30–40 minutes for medium whole potatoes.
  7. Immediately pour the potatoes into a colander to stop the cooking process.
  8. Let the potatoes sit in the colander for 2–3 minutes to steam dry.
