Ingredients:

  • 2 lbs sweet potatoes, peeled and cubed into 1-inch pieces
  • 2 tbsp olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 3 tbsp honey
  • 2 tbsp unsalted butter, melted
  • 1 tbsp brown sugar
  • 1/2 tsp ground cinnamon

Instructions:

  1. Preheat oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
  2. In a large mixing bowl, toss the cubed sweet potatoes with olive oil, salt, and pepper until thinly coated.
  3. Spread the potatoes in a single layer on the prepared baking sheet and roast for 15–20 minutes without stirring, until edges are deep golden brown.
  4. While potatoes roast, whisk together the honey, melted butter, brown sugar, and cinnamon in a small bowl.
  5. Remove the pan from the oven, pour the honey glaze over the hot potatoes, and toss gently to coat.
  6. Return the pan to the oven for another 5–8 minutes until the glaze is bubbling and sticky.
  7. Remove from heat and let them sit for 2-3 minutes to allow the glaze to set and become more velvety.
