Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- ½ tsp (3g) salt
- 1 tbsp (8g) ground cinnamon
- ¾ cup (170ml) vegetable oil
- 1 cup (200g) granulated sugar
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- 2 cups (225g) grated zucchini, squeezed slightly of excess water
- ½ cup (60g) chopped walnuts
- 8 oz (225g) cream cheese, softened
- ¼ cup (55g) unsalted butter, softened
- 2 cups (240g) powdered sugar
- 1 tsp (5ml) vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C). Grease your baking pan or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon until no clumps remain.
- In a separate large bowl, whisk the oil, sugar, eggs, and vanilla until the mixture looks pale and smooth.
- Gently stir the dry flour mixture into the wet ingredients using a spatula. Stir until just combined; do not overmix.
- Fold in the grated zucchini and walnuts.
- Pour the batter into the prepared pan and smooth the top. Bake for 45–60 minutes until a toothpick inserted into the center comes out clean.
- Let the cake cool completely in the pan before frosting.
- Beat the softened cream cheese and butter together until smooth. Gradually add the powdered sugar and vanilla, whisking until the frosting forms fluffy, stiff peaks.
- Spread a generous layer of frosting over the cooled cake.
