Ingredients:

  • 4 (6 oz) tilapia fillets
  • 1 tbsp olive oil
  • 1/2 cup Panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried oregano

Instructions:

  1. Preheat your oven to 400°F (200°C) and place a wire cooling rack inside a rimmed baking sheet.
  2. Use paper towels to firmly pat each tilapia fillet dry to remove surface moisture.
  3. In a small mixing bowl, combine Panko breadcrumbs, grated Parmesan cheese, garlic powder, paprika, salt, black pepper, and dried oregano. Stir until spices are evenly distributed.
  4. Brush the top of each fillet with olive oil. Press the fish firmly into the breadcrumb mixture, coating the top and sides.
  5. Place the coated fillets on the wire rack and bake for 12–15 minutes, or until the crust is mahogany-gold and the fish flakes easily with a fork.
