Ingredients:
- 2 cups (250g) shredded zucchini
- 1/2 tsp (3g) kosher salt
- 1 large (50g) egg, beaten
- 1/4 cup (30g) cornstarch
- 1/4 cup (25g) grated Parmesan cheese
- 2 cloves (6g) garlic, minced
- 2 tbsp (8g) fresh parsley, finely chopped
- 1/4 tsp (1g) black pepper
- 1/8 tsp (0.5g) nutmeg
- 2 tbsp (30ml) avocado oil
Instructions:
- Shred the zucchini using the large holes of a grater.
- Toss the shreds with the kosher salt in a bowl and let sit for 10 minutes to draw out moisture.
- Transfer the zucchini to a kitchen towel and twist tightly, squeezing until no more liquid drops.
- In a clean bowl, combine the squeezed zucchini with the beaten egg, cornstarch, Parmesan, minced garlic, parsley, pepper, and nutmeg.
- Stir gently until the ingredients are just combined; do not overmix.
- Heat the oil in a skillet over medium-high heat until it shimmers.
- Scoop about 2 tablespoons of batter per fritter into the pan, flattening them slightly with a spatula.
- Fry for 3–4 minutes per side until they reach a deep golden brown and feel firm.
- Transfer to a wire rack to maintain crispness.
