Ingredients:

  • 2 cups all-purpose flour
  • 1.5 cups granulated white sugar
  • 0.5 cup unsweetened cocoa powder

  • 1 tsp ground cinnamon
  • 0.5 cup vegetable oil

  • 2 cups finely shredded zucchini
  • 1 cup semi-sweet chocolate chips

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9x9 inch square baking pan and line it with parchment paper.
  2. Peel the zucchini completely and grate using the fine side of a box grater. Gently pat with a paper towel if excessively watery.
  3. In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, salt, and cinnamon until no lumps remain.
  4. Add vegetable oil, room-temperature eggs, sour cream, and vanilla extract. Stir with a spatula until just combined, ensuring no flour streaks remain.
  5. Gently fold in the finely shredded zucchini and semi-sweet chocolate chips.
  6. Pour batter into the prepared pan and bake for 35-45 minutes, or until a toothpick inserted into the center comes out clean.
