Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1 tsp (2g) baking powder
  • ½ tsp (3g) salt
  • 1 tsp (2g) ground cinnamon
  • 1 cup (200g) granulated sugar
  • ½ cup (120ml) vegetable oil
  • 2 large eggs (approx. 100g)
  • 1 tsp (5ml) vanilla extract
  • 2 cups (280g) grated zucchini (unpeeled)
  • 1 cup (170g) semi-sweet chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper.
  2. In a large mixing bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, and ground cinnamon until no clumps remain.
  3. Create a well in the center of the dry ingredients. Pour in the vegetable oil, granulated sugar, eggs, and vanilla extract. Whisk until the mixture is smooth and the sugar has partially dissolved into the fats.
  4. Gently stir in the grated zucchini until just combined. Use a rubber spatula to fold in 3/4 cup of the semi-sweet chocolate chips. Stop as soon as no flour streaks remain to avoid over-mixing.
  5. Pour the batter into the prepared loaf pan and sprinkle the remaining 1/4 cup of chocolate chips over the top.
  6. Bake for 50-60 minutes. The bread is done when the edges pull away slightly from the pan, the top is deep golden brown, and a toothpick inserted in the center comes out clean or with a few moist crumbs.
