Ingredients:
- 2 lbs sweet potatoes, peeled and cubed into 1-inch pieces
- 4 tbsp unsalted butter, melted
- 1 tsp kosher salt
- ½ tsp freshly cracked black pepper
Instructions:
- Preheat the oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
- In a large mixing bowl, toss the cubed sweet potatoes with the melted butter, salt, and pepper until every cube is fully coated.
- Spread the potatoes across the prepared sheet pan in a single layer, leaving approximately a half-inch of space between each piece to ensure air flow.
- Roast in the center rack of the oven for 30–35 minutes.
- Halfway through the roasting process (around the 18-minute mark), use a spatula to flip the potatoes.
- Remove from the oven once the edges are mahogany-colored and the interiors feel velvety when pierced with a fork.
