Ingredients:

  • 2 lbs sweet potatoes, peeled and cubed into 1-inch pieces
  • 4 tbsp unsalted butter, melted
  • 1 tsp kosher salt
  • ½ tsp freshly cracked black pepper

Instructions:

  1. Preheat the oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
  2. In a large mixing bowl, toss the cubed sweet potatoes with the melted butter, salt, and pepper until every cube is fully coated.
  3. Spread the potatoes across the prepared sheet pan in a single layer, leaving approximately a half-inch of space between each piece to ensure air flow.
  4. Roast in the center rack of the oven for 30–35 minutes.
  5. Halfway through the roasting process (around the 18-minute mark), use a spatula to flip the potatoes.
  6. Remove from the oven once the edges are mahogany-colored and the interiors feel velvety when pierced with a fork.
