Ingredients:
- 4 (6 oz) tilapia fillets
- 1/4 cup mayonnaise
- 1 tsp lemon juice
- 1/2 cup panko breadcrumbs
- 1/2 cup grated parmesan cheese
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- 1 tbsp fresh parsley, finely chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions:
- Pat the tilapia fillets completely dry using paper towels to ensure the crust adheres.
- In a small bowl, whisk together the mayonnaise and lemon juice. Brush a thin, even layer over the top of each fillet.
- In a shallow dish, combine panko breadcrumbs, grated parmesan cheese, garlic powder, smoked paprika, chopped parsley, salt, and black pepper.
- Press the coated side of each fish fillet firmly into the parmesan mixture until completely covered.
- Place the fillets on a lined baking sheet, leaving 1 inch of space between them.
- Bake at 400°F (200°C) for 12-15 minutes until the crust is golden brown and the fish is opaque and flaky.
