Ingredients:
- 2 tbsp olive oil
- 1 tbsp garlic, minced
- 1 tsp fresh ginger, grated
- 1 tbsp brown sugar
- 1 tsp ground allspice
- 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp cayenne pepper
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 4 (6 oz) tilapia fillets
- 2 limes, cut into quarters
Instructions:
- Preheat the oven to 400°F (200°C) and line a large rimmed baking sheet with aluminum foil or parchment paper.
- In a small mixing bowl, combine olive oil, minced garlic, grated ginger, brown sugar, allspice, cinnamon, nutmeg, cayenne, salt, and black pepper. Stir until a thick paste forms.
- Pat the tilapia fillets dry with paper towels. Place fillets on the prepared baking sheet and spread the spice paste evenly over the top of each fillet, pressing it firmly into the flesh.
- Bake in the center rack for 10–12 minutes until the fish is opaque, flakes easily with a fork, and the topping is bubbling.
- Immediately remove from the oven and squeeze fresh lime juice over each fillet.
