Ingredients:
- 4 (6 oz / 170 g) Tilapia fillets, skinless and boneless
- 1 tsp (5 g) salt
- ½ tsp (2 g) black pepper
- 1 tbsp (15 ml) lemon juice
- ½ cup (65 g) all-purpose flour
- 2 large (100 g) eggs, beaten
- 1 cup (60 g) Panko breadcrumbs
- ½ cup (50 g) grated Parmesan cheese
- 1 tsp (2 g) garlic powder
- 1 tsp (2 g) paprika
- Cooking oil spray
Instructions:
- Preheat oven to 425°F (218°C) and place a wire rack on a baking sheet.
- Rinse the tilapia fillets under cold water and pat them bone-dry with paper towels.
- Drizzle fillets with lemon juice and season both sides with salt and pepper.
- Set up three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of Panko, Parmesan, garlic powder, and paprika.
- Dip each fillet into the flour (shake off excess), then the beaten eggs, and finally press firmly into the Panko mixture.
- Place the breaded fillets on the wire rack, leaving one inch of space between each.
- Lightly spray the tops of the fillets with cooking oil.
- Bake for 10–12 minutes until the crust is golden-brown and the fish flakes easily with a fork.
