Ingredients:

  • 4 (6 oz / 170 g) Tilapia fillets, skinless and boneless
  • 1 tsp (5 g) salt
  • ½ tsp (2 g) black pepper
  • 1 tbsp (15 ml) lemon juice
  • ½ cup (65 g) all-purpose flour
  • 2 large (100 g) eggs, beaten
  • 1 cup (60 g) Panko breadcrumbs
  • ½ cup (50 g) grated Parmesan cheese
  • 1 tsp (2 g) garlic powder
  • 1 tsp (2 g) paprika
  • Cooking oil spray

Instructions:

  1. Preheat oven to 425°F (218°C) and place a wire rack on a baking sheet.
  2. Rinse the tilapia fillets under cold water and pat them bone-dry with paper towels.
  3. Drizzle fillets with lemon juice and season both sides with salt and pepper.
  4. Set up three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of Panko, Parmesan, garlic powder, and paprika.
  5. Dip each fillet into the flour (shake off excess), then the beaten eggs, and finally press firmly into the Panko mixture.
  6. Place the breaded fillets on the wire rack, leaving one inch of space between each.
  7. Lightly spray the tops of the fillets with cooking oil.
  8. Bake for 10–12 minutes until the crust is golden-brown and the fish flakes easily with a fork.
